In July and August, our bakers highlight two Mediterranean symbols.

 

At first, the olive: grown in every area of the basin, the fruit is the emblem of the region.

 

As for the za'atar, it is a traditional spices and herbs mix from Middle East. One of the Middle Eastern cuisines’ foundations. The term za'atar means thyme in Arabic. So, it is not surprising that the eponym mixing uses a lot of it. Its recipe varies depending on the regions, but most of them use a base of thyme, sesame, and sumac. Our zaatar is only made of these three ingredients, included white sesame.

 

This flavoured association paired perfectly with a seasonal salad.
